Christmas Orange Almond Biscotti

Thought I’d share our Christmas morning tradition: Orange Almond Biscotti.
This recipe was passed along to me by my sister-in-law, Nancy, who is an excellent baker, and I’ve made these for Christmas for as long as I can remember. These are delicious with tea or coffee. Enjoy!
Preheat oven to 350. Butter and flour a baking sheet.
Wisk together in bowl:
3 cups flour
1 1/2 t. Baking powder
1 t. Salt
Set aside.
In a mixer, cream together:
10 T. Butter, room temperature
1 T. Grated orange zest
1 1/2 cups sugar
Then, add to wet ingredients:
2 eggs, beating in one at a time.
Next, Add the flour mixture to the wet ingredients until incorporated.
By hand, mix in 1 cup almonds, slightly toasted and chopped finely. (Or you can use almond flour.)
Divide dough in half. Roll each half into a 12” log. Place on prepared pan. Brush each log with a beaten egg wash, and sprinkle with a little sugar.
Bake 30 minutes. Cool 10 minutes. Cut into 1/2 inch slices and turn on their sides. Reduce oven heat to 325. Bake 8 minutes. Remove from heat and turn the biscotti over. Bake the other side for 5 minutes. Cool.
Drizzle with melted chocolate if desired or dip one end the long way.
Enjoy!
